Authentic Mexican Food - The Hottest Trend in the US


As per a survey by Nation's Restaurant News Community (NRN), half of the US adults surveyed ate Mexican food at least once a month.

Statistic based on the U.S. Census data and Simmons National Consumer Survey (NHCS) reveals 233.91 million Americans ate Mexican food and used Mexican ingredients in 2016.

All these findings reveal that Mexican food occupies a unique place in the American culinary culture.  Ethnic yet mainstream, exotic yet partly homegrown, Mexican food is trending hot in America leading to the growth of a large number of  Mexican taco restaurants or tequila restaurants.  There’s a secret behind the popularity.

The variety, the taste, the unusual flavor of the assortment of fresh and zesty spices, the traditional ingredients and the cooking methods (grilling, boiling, frying and steaming) make Mexican food famous.


Not to forget the nutritional values which the nutritionists say, are low in fat and calories, without compromising the mouthwatering taste. The ingredients need to be fresh; the food must have adequate spices, nuts, and herbs that are good for health. In fact, if properly cooked, Mexican food is quite light and easy on the stomach.

Authentic Mexican food is something that dates back to the Maya Indians (circa 2000 BC- 250 AD). They ate beans, corn, fish, chicken, turkey, duck, and other meats cooking them using their own culinary methods with fresh spices like chilli, peppers, cinnamon, cloves, and anise to give unique flavors to the dishes.

Meat though was not always a staple of Mexican cooking, and until the arrival of the Spaniards, Mexican diet mostly had beans and corn. Epazote, a very pungent aromatic herb (also known as Mexican tea) was used to flavor beans to prevent them from causing intestinal discomfort.

Cocoa is another ingredient they used in several dishes to add a rich, warm flavor. Spices mixed with small amounts of cocoa along with peanut butter were used to make mole (sauce) often served over chicken. They also used raisins for certain dishes.
